Crispy oven carrot fries




Crispy oven baked Carrot fries, topped with Italian parsley and served with a spicy chipotle mayo. So good they ought to be bad for you!  

I’m going I give you a rough recipe and you can scale it accordingly. Use as many carrots as you need and whip up the sauce, seasoning it to your own taste. Less spicy? Use less siracha sauce. Too tart? Toss in a pinch of sugar.

Method: 
Cut up whole carrots into thin strips resembling French fries. Try to keep them all the same size so they’ll cook evenly.
 Toss with a tablespoon of olive oil, some salt, pepper and garlic powder. 
Bake at 450 degrees for 20 minutes or until tender and crispy. Sprinkle with Parmesan cheese & minced Italian parsley. 
Mix mayo with siracha, either sour cream or Greek yogurt, zest and juice of a lime, salt and pepper. 
Stir together and dip the carrot fries into it. Mmm!
